Andreani, Correo Argentino, OCA or another: the workshop picks the carrier and types the number. Craftshop builds the link to follow the parcel.
The buyer learns nothing new
Shopify receives the fulfillment and notifies the buyer as with any other order. The buyer never has to know Craftshop exists.
What you charged and what it cost
Craftshop reads the shipping the buyer paid and records the real cost, so you see the margin of every shipment.
